What's Cooking? Steak & Loaded Potato Casserole



Im going to start a "whats cooking" segment to my blog, when i make a nice dinner i will post it. The recipe and directions ect. I also have made a page called "Recipes" where i will be posting the recipe to my more "interesting" dishes, if anyone has an idea or suggestion for me to make or try or post i will do so, i was a baker before i left work so i am a decent cook aswell and can whip up pretty much anything!

So tonight's menu is: Steak & Loaded Potato Casserole

Ingredients :

Steak - I used two eye of round cuts i think they were about 6-8oz
      
Marinade

  •   Bullseye Sweet&Sticky (1/2 cup)
  •   Bullseye Roasted Garlic&Onion (1/2 Cup)
  •   Frank's Red Hot (just a few shakes)
  •   PC Sweet Chilly Thai Sauce (1/4 cup)
  •   Salt, Pepper and Garlic Salt (Few shakes of each)


Loaded Potato Casserole

  • 12 small/meduim potatoes
  • 1 250ml container sour cream
  • 2 big spoonfuls of margerine
  • 2 green onions
  • 250g of shredded old chedder
  • 9 half strips of bacon
  • Garlic Salt

The night before i took the steaks out of the package and hit them with my fist to tenderize. I then mixed all of my ingredients for the marinade into a large zipper seal bag. I added the steaks made sure to cover both steaks with marinade and refrigerated.


To begin, I cleaned all my work surfaces with lysol wipes and let them dry, i washed my hands and gathered all utensils and ingredients i needed.  Preheat oven to 350°C.


Peel the potatos and cut into peices about the size of a large egg, rince in cold water. Fill a medium sized pot with cold water, add potatos to water and boil on max heat for 25 min. or until you can easily poke a fork into them.


Fry up the bacon in a pan, honestly i reallt detest frying bacon in a frying pan, i would rather use a griddle pan but silly me started the dish washer and forgot to take the griddle pan and spatula out to hand wash so i ended up using a frying pan and fork, which i do not advise, since i burnt three of my fingers flipping bacon. 
 
Once the bacon is cooken set on paper towel or bead heal to soak away the grease. Keep pan and bacon grease, it will be used later to make the steak.

Once the potatos have cooked, strain and return them to the pot. Begin preparing green onions; 

Cut off white ends and any undesirable ends that are brown of shriveled. Wash onions with water and cut into small peices.

Put  a few large spoonfulls of margerine (real butter would be better), and entire container of sour cream into the potatos. Use a hand masher to mix up and mash the potato mixture.

 Use a hand mixer to whip the potatoes to a nice mashed potato consistancy. Add the cut up green onions to potatioes and spoon mix them in. 


Add half the potatoes to a casserole dish and pat down. 


Sprinkle some garlic salt on the potatoes. ass 1/2 of the shredded cheddar and then add bacon. 
Add the rest of the potatos on top, the rest of the cheese and bacon. 

Set aside.


Put Steaks in the pan with the bacon grease that you saved. Cook for 4-5 min on each side on med heat
Once you have cooked each side in the frying pan, Place on a baking sheet. Sprinkle with garlic salt and top with about 1 tbsp of margerine. place in oven on middle rack. Place Loaded mashed potato casserole along with it. 

 Cook for 8-10 minuites, i like my steak well done, and this cooks it that way.
 Take it out and serve.
